1x 15 oz can chickpeas
1 tbsp grated Parmesan or other hard cheese
6 oz goat cheese
2 tbsp flat leaf parsley, finely chopped
1 tsp lemon juice
1 clove chopped garlic
1/2 small red onion, diced
1/4 red pepper, diced
4 green onions, finely chopped
1/4 tsp cayenne pepper
Pinch Salt and ground black pepper
1 tbsp olive oil
For Frying
1/2 cup flour
1/4 cup cornmeal
1 tbsp vegetable oil


 


1. Place all ingredients except lemon juice into food processor
2. Pulse ingredients together, add lemon juice and mix together
3. Transfer the chickpea mixture into a large bowl
4. Mix flour and cornmeal together, dust onto work surface
5. Mould chickpea mixture into 4 cakes coating with flour and cornmeal mix
6. Heat oil in a pan and fry gently for 3 minutes each side.
7. Transfer onto cookie sheet, and top with goat cheese
8. Place under broiler for 2-3 minutes until cheese melts and turns golden
9. Meanwhile slice roasted red peppers into strips and place in bowl
10. Add chopped garlic, shredded basil, balsamic vinegar and olive oil and mix together 11. Season with salt and black pepper
12. Remove patties from broiler
13. Top with red pepper dressing and serve immediately
