Preheat the oven to 375˚F
Toss sweet potato in olive oil and put on sheet pan
Bake in oven for 30 min or until fork tender
Melt butter in medium sized pot, add onion and garlic and sweat on medium low heat
Add ginger and jalapenos and stir
Remove potatoes from oven and add to pot
Add chicken stock, bring to boil and simmer for 10 minutes
Remove from heat and add, orange rind
Leave soup to cool down before blending
Blend soup and pass through fine sieve or strainer
Ladle into serving bowls and garnish with chopped cilantro and drizzle with coconut milk
