1 Ciabatta loaf

8 oz Oaxacan cheese, cut into 1/2 inch slices

1/2 cup flour

1/2 medium red onion, finely diced

1 cup tomato, deseeded and finely diced

1 clove garlic, crushed

1 tsp Jalapeno, finely chopped

1 tsp Lime juice

2 tbsp Olive oil

1 tbsp Cilantro, finely chopped

Pinch salt



 



Mix garlic, tomato, olive oil, cilantro, lime juice and jalapeno together, season
Cut ciabatta in half and toast
Coat cheese in flour, put one tablespoon of olive oil in non stick pan add cheese and brown on either side at until golden brown and the cheese has started to melt
Place cheese on ciabatta and top with salsa, cut in half on the diagonal
Serve immediately

Yummy I just made one of these except I cut my cheese too thin and made a mess! Also almost burned my house down because I forgot to turn off the gas burner. Oppsy.. I am a MESS!
