1 lb chicken tenders (or you can use whole skinless chicken breasts cut into 1 inch thick strips)
1 lemon
3 tbsp olive oil
2 cloves garlic, peeled
2 tbsp fresh parsley
1 tbsp fresh rosemary
1 tbsp fresh mint
1 tbsp fresh oregano
1 tbsp fresh thyme
Salt and freshly ground black pepper


 


1. Roughly chop herbs and place in bowl or pestle and mortar
2. Add juice of the lemon, the peeled garlic cloves and salt and pepper to season
3. Add olive oil and mix together in pestle and mortar
4. Leave to marinate in the refrigerator for at least 20 minutes
5. Remove from refrigerator and place on a hot grill
6. Grill for 3-4 minutes each side or until the chicken is thoroughly cooked through
7. Remove from grill and serve immediately with roasted tomatoes or your favorite side.

Great Summer video. A teacher in a class one said that you always have to pound your chicken so it cooks throw evenly. Would that apply here?
